Summer Roughage Salad


  • ¼ cup or so olive oil
  • 1 squeezed lemon
  • A few garlic cloves
  • Salt and pepper, to taste
  • Fresh herb medley optional, but the simple lemon and garlic vinaigrette is amazing.


This is amazing with a variety of fresh vegetables. I have been making this salad at home almost every night with different vegetable combinations

Vegetable combination options include:

Finely-sliced summer squash, chopped broccoli, peas, green beans, kale, broccoli, cabbage, carrots, cucumbers, radishes, and turnips

Fresh herbs add a wonderful touch. My favorites have been fresh dill, basil, and fresh mint.

Feta cheese

Chop up chosen vegetables and add to a bowl. Combine dressing ingredients, and blend in an emersion or regular blender, or food processor. I use my NutriBullet. Add cheese (not necessary, but I love my feta). Toss with the dressing and let sit for at least 15 minutes. Best prepared daily as some of the produce options might get soggy.
