Spinach Rice Casserole


  • 1 c. chopped onion (try your scallions instead)
  • 1 Tbsp. olive oil
  • 1-1/2 uncooked long grain rice
  • 2 c. chicken or vegetable stock
  • 2 c. water
  • 1 bunch spinach torn
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 c. shredded parmesan cheese


Preheat oven to 375 degrees. In a large saucepan, sauté onion in oil until it’s tender. Add rice; cook and stir for 2 minutes. Add broth and water; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in the spinach, salt and pepper; cook until spinach is wilted. Transfer to a 2-quart baking dish coated with cooking spray. Sprinkle with Parmesan cheese. Cover and bake at 375 degrees for 20-25 minutes or until rice is tender.
