Snow Peas with Sesame Dressing

Ingredients

  • 8-10 ounces snow peas, washed and trimmed
  • 1/4 cup vegetable oil (alternative healthier option is grape seed oil)
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon soy sauce, tamari or Braggs amino acids
  • 2 teaspoons maple syrup, honey or cane sugar
  • 1/2 teaspoon sesame oil
  • 1 teaspoon minced ginger
  • 1/4 teaspoon dried crushed red pepper
  • 1 teaspoon white and/or black sesame seeds
  • 1 tablespoon chopped scallions

Directions

Blanch snow peas in a pot of boiling water, approximately 30 seconds. Drain immediately into a colander and run cold water over the snow peas until they have cooled. Better yet, have a bowl of iced water ready for them to chill in. In a bowl, whisk together the oils, vinegar, soy sauce, maple syrup, ginger, and crushed red pepper until thoroughly combined. Toss the snow peas with the dressing. Sprinkle the sesame seeds and scallions over the snow peas; then toss to combine. Let chill for 30 minutes before serving.
