Fennel (or Beet, Squash, or Carrot) Waffles

Fennel Waffles


  • 1 ½ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • Pinch of cinnamon, optional
  • ¾ cup milk
  • 5 tablespoons butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups finely grated fennel, carrot, or a combination of both


Mix dry ingredients and wet ingredients in separate bowls. Add wet ingredients to dry and stir just to combine. Fold in grated veggie of choice. Let sit for 10 minutes. Cook according to waffle iron instructions. Serve with cream cheese or maple syrup.
