Ingredients

  • 1 bunch cilantro
  • Lots of tomatoes
  • One small onion (or half of a medium/large onion)
  • 1-2 cloves of garlic
  • Yellow, red, or orange pepper for sweetness
  • 1 jalapeño or spicy pepper
  • Salt to taste
  • Splash of lime juice

Directions

All ingredients should be roughly chopped before being put into the food processor. Put cilantro toward the bottom so the weight of the pepper and onion can pull it down. Place tomatoes on top, since they are the juiciest and the ingredients at the bottom will get chopped more thoroughly. Fill up the food processor with chunks of tomato (add more as you go if desired). Pulse the food processor to gradually chop. Salt and drain by pouring the mix into a colander over a bowl to remove excess liquid. Add freshly squeezed lime juice or a splash from a bottle. Stir and enjoy. Make sure to save the extra liquid that drains out—it is delicious as a fresh-from-the-garden health tonic, a spiced tomato juice mixer, or cooked into a pot of beans.
