- Beets, boiled, peeled, and sliced into strips
- Fresh arugula, turnip greens, or braising mix - rinsed and patted dry with a paper towel
- Goat cheese chevre
- Walnuts, chopped
- Olive oil
- Dry powdered mustard
- Salt and pepper
The amount of ingredients depends on how many people you are serving. You can plate each person individually for the right combination of salad ingredients and then dress it accordingly. The dressing for three individual salads is ¼ c. olive oil, half a lemon, ¼ tsp. of powdered mustard, ¾ tsp. of sugar, and salt and pepper to taste.
Make the salad with a handful of greens, a few beets or turnips, some crumbled goat cheese, and garnished with chopped, roasted) walnuts (just toast them in your oven for a few minutes). Drizzle each salad with the dressing or use a vinaigrette.
