- 3 tablespoons olive oil
- 1-2 cups summer squash, thinly sliced
- A handful or two of braising mix, roughly chopped
- Salt and pepper to taste
- 2 cloves garlic, minced
- Hard cheese for grating, such as Parmesan
- Fresh thyme (optional)
In a large saucepan, heat the olive oil over high heat, then add the summer squash and cook for 3-4 minutes, stirring a bit. When the squash is somewhat cooked, add garlic, braising mix, salt, and pepper. Cook for another 2-3 minutes. Sprinkle with cheese to finish the dish.
