Summer Squash and Braising Mix

  • 3 tablespoons olive oil
  • 1-2 cups summer squash, thinly sliced
  • A handful or two of braising mix, roughly chopped
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • Hard cheese for grating, such as Parmesan
  • Fresh thyme (optional)


Serves 3-4

In a large saucepan, heat the olive oil over high heat, then add the summer squash and cook for 3-4 minutes, stirring a bit. When the squash is somewhat cooked, add garlic, braising mix, salt, and pepper. Cook for another 2-3 minutes. Sprinkle with cheese to finish the dish.
