- 2 lbs sweet potatoes diced
- 6 cloves of garlic minced (I personally like more)
- 3 tablespoons minced ginger
- 1 part olive oil and one part soy sauce or tamari
Turn oven on to 375 degrees. Mix ginger, garlic, olive oil and soy sauce together in a marinade and let sit for 15 minute. Dice up the sweet potatoes then add marinade. You should have enough to get a thin coat of oil and soy sauce on all the potatoes. Bake for 45 minutes or until sweet potatoes are tender. I turn the sweet potatoes over once or twice during the baking so that the top ones do not dry out to much. If you turn the oven up to 400 or 425 degrees for the last 10 minutes the top one will crisp up nicely. I like to eat this as a side dish or with brown rice as a meal.
