Asian Cucumber Salad

Ingredients

  • 3/4 cup seasoned rice vinegar
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1 tablespoon garlic, minced
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon freshly ground pepper
  • 2 large cucumbers, peeled and sliced
  • 2 tablespoons sesame seeds, toasted

Directions

Whisk together vinegar, water, sugar, garlic, soy sauce, sesame oil and pepper in a large bowl.
Add cucumbers, tossing to coat. Cover and chill 1 hour.
Add sesame seeds just before serving, and toss.
