Zydeco Green Beans


  • 6-12 sliced garlic gloves
  • 6 t yellow mustard seeds
  • 3 pounds green beans, tops trimmed
  • 6-12 small hot peppers (optional)
  • 6 dill heads or dill weed
  • 3 ½ cups white wine vinegar (no substitutions)
  • 2 T pickling salt
  • 3 ½ cups water


Makes 6 pint jars

Divide garlic, mustard, dill, beans, peppers into jars.  Bring vinegar, salt, and water to a boil, pour over beans leaving ½ in head space.  Place lids on jars and process for 5 minutes in water bath.  Age the pickles for one month before snacking on them.
