• 1 cucumber diced
  • 4 spring onions
  • 1 garlic clove
  • 1 cup plain yogurt
  • 3 Tsp fresh chopped mint
  • salt and pepper


Trim spring onions and garlic, then chop them very fine. Beat yogurt until smooth, if necessary, then gently stir in the cucumber, onions, garlic and mint. Transfer the mixture to a serving bowl and add salt and plenty of fresh black pepper to taste. Chill until ready to serve and garnish with a sprig of mint, if you like. Serve this classic Greek dip with warmed pita bread, goes well with hummous as well. Serves 4.
