Baked summer squash and torpedo onions

Ingredients

  • A few sliced summer squash (variety of summer squash is wonderful)
  • A few torpedo onions sliced ( you can slice lengthwise and include some of the greens, like a ¼ of the total length or so)
  • Dash of Extra Virgin Olive Oil
  • Salt & Pepper to taste

Directions

Heat oven to 400.Slice up fresh Zucchini, Squash & Onions. Toss in olive oil, salt, pepper and any desired chopped fresh herbs on a cookie sheet or baking pan. Spread veggies in even layer on baking sheet. Bake for 15-20 minutes, turning once.
