- 1/3 cup freshly grated parmesan cheese
- 5 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp finely grated lemon peel
- Salt and Pepper
- 4 cups packed arugula
- 1 cup halved cherry tomatoes
Blend in food processor or blender 1/3cup freshly grated Parmesan cheese 5 tbls extra-virgin olive oil, 2 tbls fresh lemon juice, 1 tsp finely grated lemon peel. Add salt and pepper to taste. Chill in refrigerator. 4cups(packed) arugula, 1cup halved cherry tomatoes. Combine arugula and tomatoes in large bowl. Toss with enough dressing to coat.
